About Michael & Dawn
Tina’s Legacy
From their first shift together, till today, Michael and Dawn have been the perfect team and couple. Originally hired to be the wine expert, people complimented how well they both worked together. It was from that day, they both knew, that their passion for food and wine, would make for a long and beautiful relationship.
Since a young child, helping his parents and older sisters, Michael felt a call to join the service industry. That youthful culinary imagination, inspired him to learn how to creating elaborate and enriching meals. Having seen the growth of food and wine taking place in Dundee, Oregon, in 1995, Michael began working in the cellars of Erath Vineyards, assisting with harvests, bottling and caretaking of the vineyard. His love for wine, lead him on a journey becoming an 11 year volunteer for the International Pinot Noir Celebration, as a Maitre d’. Then working for the original owners of Tina’s, starting at the bottom and working his way up to becoming the co-owner/Chef of Tina’s with his wife Dawn.
Over the 30 plus years within the industry, Michael can only thank the countless winemakers, chefs, artists and farmers that shared their valuable knowledge and wisdom. The food created at Tina’s is a reflection and homage to those people. Every dish created as head Chef, is backed by over 30 years of kitchen and wine industry expertise.
Dawn grew up on the family “Century” Farm in Willowa County, Eastern Oregon. When the chance for Michael and Dawn to take over Tina’s. They both knew her knowledge and love would fall to being the host, educator and manager of the restaurant. Her goal is to bring a friendly knowledgable, attentive and authentic experience to our guests. Whether it be your first visit or one of our regulars.
It takes more than just knowledge of food and wine to create the perfect pairing. Dawn works with Michael in curating an amazing wine selection that pairs to perfection with Tina’s seasonal menu. If a meal wouldn’t go well with a wine, Dawn would make sure you had that perfect pairing.
Together they have created an authentic wine country experience, rooted in the history of the Dundee Valley. Since 1991 Tinas has cultivated a marriage of classic dishes and culinary techniques with current trends. Always keeping with its original roots, since 1991, with fresh farm to table, locally sourced, seasonal ingredients and local wines.
